- 1 cup graham cracker crumbs
- 2 tablespoons unsweetened shredded coconut
- 3 tablespoons coconut oil, melted
- 2 cups low-fat cream cheese, softened
- 1 cup Greek yogurt
- 1/2 cup sugar or sugar substitute
- 1 teaspoon vanilla extract
- 1/4 cup sweetened shredded coconut (for topping)
- 1/4 cup light whipped topping (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8-inch square baking pan.
- Combine the graham cracker crumbs, 2 tablespoons of shredded coconut, and melted coconut oil in a mixing bowl.
- Press the mixture into the bottom of the prepared pan for the crust.
- Beat the cream cheese until smooth, then add Greek yogurt, sugar, and vanilla extract, mixing until fluffy.
- Pour the cream cheese mixture over the crust in the baking pan.
- Sprinkle sweetened shredded coconut on top.
- Bake for 25-30 minutes until the center is set yet jiggly.
- Cool completely in the pan, then refrigerate for at least 2 hours.
- Serve with a dollop of light whipped topping if desired.
