Delight in these Skinny Coconut Cheesecake Bars, a creamy, guilt-free dessert that captures the essence of coconut for a perfect cozy treat.


Ingredients

  • 1 cup graham cracker crumbs
  • 2 tablespoons unsweetened shredded coconut
  • 3 tablespoons coconut oil, melted
  • 2 cups low-fat cream cheese, softened
  • 1 cup Greek yogurt
  • 1/2 cup sugar or sugar substitute
  • 1 teaspoon vanilla extract
  • 1/4 cup sweetened shredded coconut (for topping)
  • 1/4 cup light whipped topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch square baking pan.
  2. Combine the graham cracker crumbs, 2 tablespoons of shredded coconut, and melted coconut oil in a mixing bowl.
  3. Press the mixture into the bottom of the prepared pan for the crust.
  4. Beat the cream cheese until smooth, then add Greek yogurt, sugar, and vanilla extract, mixing until fluffy.
  5. Pour the cream cheese mixture over the crust in the baking pan.
  6. Sprinkle sweetened shredded coconut on top.
  7. Bake for 25-30 minutes until the center is set yet jiggly.
  8. Cool completely in the pan, then refrigerate for at least 2 hours.
  9. Serve with a dollop of light whipped topping if desired.
