Description

Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 2 cups sweet potatoes, peeled and diced
  • 1 cup carrots, sliced
  • 1 cup tomatoes, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Add the chicken thighs, sweet potatoes, carrots, tomatoes, onion, and garlic to a slow cooker.
  2. Pour in the chicken broth and add thyme, rosemary, salt, and pepper.
  3. Stir to combine all ingredients until everything is well-coated.
  4. Cover and cook on low for 360 minutes (6 hours) or on high for 240 minutes (4 hours).
  5. Stir in the heavy cream 30 minutes before serving.
  6. Serve warm and enjoy!

Notes

You can prep the ingredients the night before and store them in the fridge for an easy cook day. Consider adding greens or other seasonings for variation.
