Description

A comforting and hearty slow cooker dish made with ground beef, potatoes, beans, corn, and cheese, perfect for family dinners.


Ingredients

  • 1 pound ground beef
  • 4 cups potatoes, diced
  • 1 can (15 oz) beans (your choice), drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 can (28 oz) diced tomatoes with juices
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon chili powder (optional)

Instructions

  1. Add the ground beef, diced potatoes, beans, corn, shredded cheese, diced tomatoes, chopped onion, minced garlic, salt, pepper, and chili powder (if using) to a slow cooker.
  2. Stir everything together until well combined.
  3. Cover the slow cooker with a lid and cook on low for 360-480 minutes or on high for 180-240 minutes, until the potatoes are tender and the meat is cooked through.
  4. Once cooked, stir again and serve hot. Enjoy your hearty meal!

Notes

This dish can be prepared the night before. Just combine all the ingredients in the slow cooker insert and refrigerate. In the morning, set it to cook and enjoy when you come home.
