Deliciously comforting garlic butter smashed potatoes, perfect for any occasion.
Ingredients

- 1.5 pounds small red potatoes
- 3 cloves garlic, minced
- 4 tablespoons butter
- Salt, to taste
- Pepper, to taste
- 1 cup cheese (shredded cheddar or parmesan)
- ¼ cup fresh chives, chopped
Instructions
- Boil the small red potatoes in salted water until they become slightly soft, about 15-20 minutes.
- Drain the potatoes and gently place them on a baking sheet.
- Smash each potato with a fork or a potato masher until they are about ½ inch thick.
- Melt the butter in a small pan over low heat. Add the minced garlic and season with salt and pepper.
- Baste each smashed potato with the garlic butter.
- Sprinkle shredded cheese and fresh chives over each potato.
- Roast in the preheated oven at 425°F (220°C) for about 20-25 minutes.
Notes
Can pre-boil the potatoes a day ahead. Leftovers can be stored in an airtight container for up to three days.
