Description

Deliciously comforting garlic butter smashed potatoes, perfect for any occasion.


Ingredients

Scale
  • 1.5 pounds small red potatoes
  • 3 cloves garlic, minced
  • 4 tablespoons butter
  • Salt, to taste
  • Pepper, to taste
  • 1 cup cheese (shredded cheddar or parmesan)
  • ¼ cup fresh chives, chopped

Instructions

  1. Boil the small red potatoes in salted water until they become slightly soft, about 15-20 minutes.
  2. Drain the potatoes and gently place them on a baking sheet.
  3. Smash each potato with a fork or a potato masher until they are about ½ inch thick.
  4. Melt the butter in a small pan over low heat. Add the minced garlic and season with salt and pepper.
  5. Baste each smashed potato with the garlic butter.
  6. Sprinkle shredded cheese and fresh chives over each potato.
  7. Roast in the preheated oven at 425°F (220°C) for about 20-25 minutes.

Notes

Can pre-boil the potatoes a day ahead. Leftovers can be stored in an airtight container for up to three days.
