Description

Delightful Starbucks-inspired birthday cake pops that are easy to make and perfect for any celebration.


Ingredients

Scale
  • 1 (13.25 oz) box of store-bought vanilla cake mix
  • ⅓ cup neutral oil (vegetable, avocado, canola, etc.)
  • 1 cup milk or water
  • 4 large eggs
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 tsp milk (add more if needed)
  • 12 oz candy melts
  • White nonpareils or sprinkles

Instructions

  1. Preheat your oven to 325-350℉ (162-175℃).
  2. Combine all the cake ingredients: the cake mix, oil, milk (or water), eggs, and softened butter in a large mixing bowl. Mix until smooth.
  3. Pour the batter into a greased or lined pan and transfer it to the oven.
  4. Check for doneness by inserting a toothpick into the center of the cake about 2-4 minutes before the end of the baking time.
  5. Transfer the cake to a large mixing bowl while it’s still hot. Crumble it until there are no large pieces left.
  6. Mix the buttercream ingredients: powdered sugar, vanilla extract, a pinch of salt, and milk until smooth.
  7. Add the buttercream to the crumbled cake and mix until combined.
  8. Roll the mixture into balls about 1¼-inch in diameter, then freeze for 15 minutes.
  9. Melt a small amount of pink candy melts in the microwave until smooth.
  10. Dip the tip of each lollipop stick into the melted candy and insert it halfway into each cake ball.
  11. Chill the cake pops in the freezer for another 15 minutes.
  12. Melt the remaining candy melts and dip each cake pop completely.
  13. Decorate the pops with sprinkles while the coating is still wet and allow them to dry upright.

Notes

Make-ahead by preparing the cake balls a day in advance. Store leftovers in an airtight container for up to a week or freeze for later.
