Description

A comforting bowl of stir-fried udon noodles loaded with colorful vegetables and your choice of protein, perfect for chilly nights.


Ingredients

Scale
  • 200g udon noodles
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • 1 cup mushrooms, sliced
  • 200g protein of choice (chicken, beef, tofu)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Green onions, chopped (for garnish)

Instructions

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. In a large pan or wok, heat the sesame oil over medium heat.
  3. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.
  4. Add your choice of protein and cook until browned and cooked through.
  5. Add the mixed vegetables and mushrooms, stir-fry for about 3-5 minutes until tender.
  6. Stir in the cooked udon noodles.
  7. Pour soy sauce and oyster sauce over the noodles. Toss everything together until well coated and heated through.
  8. Serve hot, garnished with chopped green onions.
