- 2 chicken breasts
- 1 cup mushrooms, chopped
- 1 cup cheese (like mozzarella or cheddar), shredded
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil over medium heat in a skillet. Add chopped mushrooms and garlic, cooking until soft and fragrant, about 5 minutes.
- Mix cooked mushrooms with cheese. Season the mixture with salt and pepper; let it cool slightly.
- Cut a pocket in each chicken breast, creating enough space to generously stuff the mushroom and cheese mixture inside.
- Sear the stuffed chicken breasts in the same skillet for 3-4 minutes on each side until they are beautifully golden brown.
- Mix heavy cream and Dijon mustard in a bowl. Pour this creamy sauce generously over the stuffed chicken breasts in the skillet.
- Transfer to the oven and bake for 20-25 minutes, until the chicken is thoroughly cooked and the flavors meld beautifully. Serve warm, and enjoy!
