- 1/2 cup butter; softened
- 3/4 cup sugar
- 1 whole egg
- 1 tsp. vanilla extract
- 1/2 tsp. almond extract
- 3 Tbsp. cream cheese; softened
- 1 tsp. baking powder
- 2 cups all-purpose flour
- 1/4 cup butter; softened (for frosting)
- 2 cups powdered sugar
- 2 Tbsp. milk
- 1/2 tsp. vanilla extract (for frosting)
- Pink food coloring gel (optional)
- Sprinkles (optional)
Instructions
- Preheat your oven to 350°F. Line a 9 x 9-inch baking pan with parchment paper and set aside.
- Beat together the softened butter and sugar until fluffy, about 2-3 minutes.
- Add the egg, vanilla, almond extract, and cream cheese, mixing until well combined.
- Slowly add in the flour and baking powder until a thick cookie dough forms, being careful not to overmix.
- Spread the cookie dough into the prepared baking pan evenly.
- Bake for 20-25 minutes, until set and lightly golden brown. Let cool in the pan for a few minutes.
- Combine the softened butter, powdered sugar, milk, and vanilla extract to make frosting. Optionally, add pink food coloring.
- Spread frosting generously on the cooled cookie bars.
- Top with sprinkles and cut into 16 square pieces. Enjoy!

These bars can be made ahead and stored in an airtight container for up to 3 days. Use a warm knife for clean cuts.
