Ingredients

  • 8 oz pasta (fettuccine or your favorite shape)
  • 1 cup mushrooms, sliced (button or cremini work well)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup vegetable broth
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup freshly grated Parmesan cheese (plus more for serving)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta: Start by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Reserve a cup of the pasta water, then drain and set aside.
  2. Sauté mushrooms and garlic: In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 4-5 minutes until they’re tender and golden. Toss in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  3. Create the sauce: Pour in the vegetable broth and heavy cream. Stir well, then season with salt and pepper. Let it simmer gently for about 3-4 minutes, allowing the sauce to thicken slightly.
  4. Combine pasta and sauce: Add the drained pasta to the skillet, tossing to coat it in the creamy mushroom sauce. If it appears too thick, add a splash of the reserved pasta water to reach your desired consistency.
  5. Finish with cheese: Stir in the grated Parmesan cheese until melted and well incorporated. Taste and adjust the seasoning if necessary.
  6. Serve and enjoy: Plate the creamy garlic mushroom pasta and garnish with freshly chopped parsley and an extra sprinkle of Parmesan. Dig in while it’s still warm!
