- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) corn, drained
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onion turns translucent and fragrant.
- Add the ground turkey to the pot, breaking it apart with a wooden spoon. Cook until browned, stirring occasionally.
- Stir in the diced sweet potatoes, diced tomatoes, corn, chicken broth, chili powder, cumin, salt, and pepper. Combine everything well to allow the flavors to meld.
- Bring the mixture to a boil, then reduce the heat to low. Let it simmer for about 25-30 minutes or until the sweet potatoes are tender.
- Serve warm in large bowls, and enjoy as a comforting meal.
Notes
Feel free to swap sweet potatoes for butternut squash or add in your favorite beans. This chili stores well in the fridge and tastes even better the next day.
