Description

A warm and cheesy taco casserole that combines seasoned ground beef, crispy tortillas, and melty cheese, making it a perfect weeknight dinner.


Ingredients

Scale
  • 1 lb ground beef (or turkey)
  • 1 packet taco seasoning
  • 8 corn or flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1 can black beans (drained and rinsed)
  • 1 cup salsa
  • Toppings: sour cream, jalapeños, avocado, cilantro (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat, then stir in taco seasoning and prepare according to package instructions.
  3. In a baking dish, layer 1/3 of the tortillas, followed by half of the seasoned meat, 1/3 of the cheese, and 1/2 of the black beans and salsa. Repeat the layers.
  4. Top with the remaining tortillas and cheese.
  5. Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 15 minutes or until cheese is bubbly and golden.
  6. Let it cool for a few minutes, then add your desired toppings and serve.

Notes

Make ahead and refrigerate overnight. Reheat in the oven for best results.
