Description
A warm and cheesy taco casserole that combines seasoned ground beef, crispy tortillas, and melty cheese, making it a perfect weeknight dinner.
Ingredients

- 1 lb ground beef (or turkey)
- 1 packet taco seasoning
- 8 corn or flour tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 1 can black beans (drained and rinsed)
- 1 cup salsa
- Toppings: sour cream, jalapeños, avocado, cilantro (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat, then stir in taco seasoning and prepare according to package instructions.
- In a baking dish, layer 1/3 of the tortillas, followed by half of the seasoned meat, 1/3 of the cheese, and 1/2 of the black beans and salsa. Repeat the layers.
- Top with the remaining tortillas and cheese.
- Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 15 minutes or until cheese is bubbly and golden.
- Let it cool for a few minutes, then add your desired toppings and serve.
Notes
Make ahead and refrigerate overnight. Reheat in the oven for best results.
