Description

A comforting bowl of creamy noodles enveloped in rich peanut sauce, perfect for busy weeknights and family dinners.


Ingredients

  • 8 oz rice noodles
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons honey or maple syrup
  • 2 teaspoons sesame oil
  • 1 garlic clove, minced
  • 1 tablespoon grated ginger
  • 1 cup bell peppers, sliced
  • 1 cup shredded carrots
  • Chopped green onions and cilantro for garnish
  • Crushed peanuts for topping

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. Whisk together the peanut butter, soy sauce, lime juice, honey, sesame oil, garlic, and ginger in a bowl until smooth.
  3. Heat a little oil in a large skillet over medium heat. Add the bell peppers and carrots, and stir-fry for 2-3 minutes until they soften slightly.
  4. Add the cooked noodles and peanut sauce to the skillet. Toss until everything is evenly coated and heated through.
  5. Serve garnished with chopped green onions, cilantro, and crushed peanuts for an added crunch.

Notes

Make the peanut sauce in advance and store it in the fridge for up to a week. Rinse cooked noodles under cold water to prevent sticking if not serving immediately.
