- 8 oz rice noodles
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons lime juice
- 2 tablespoons honey or maple syrup
- 2 teaspoons sesame oil
- 1 garlic clove, minced
- 1 tablespoon grated ginger
- 1 cup bell peppers, sliced
- 1 cup shredded carrots
- Chopped green onions and cilantro for garnish
- Crushed peanuts for topping
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- Whisk together the peanut butter, soy sauce, lime juice, honey, sesame oil, garlic, and ginger in a bowl until smooth.
- Heat a little oil in a large skillet over medium heat. Add the bell peppers and carrots, and stir-fry for 2-3 minutes until they soften slightly.
- Add the cooked noodles and peanut sauce to the skillet. Toss until everything is evenly coated and heated through.
- Serve garnished with chopped green onions, cilantro, and crushed peanuts for an added crunch.
Notes
Make the peanut sauce in advance and store it in the fridge for up to a week. Rinse cooked noodles under cold water to prevent sticking if not serving immediately.
