- 150 g plain yogurt
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp garam masala
- 1 tsp sweet paprika
- 1 tsp salt
- 1 tbsp lemon juice
- 1 tbsp oil
- 2 tbsp butter
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp grated ginger
- 1 tsp coriander powder
- 1 tsp garam masala (for the sauce)
- 1/2 tsp chili powder (optional)
- 400 g crushed tomatoes
- 150 ml cream or coconut milk (for lactose-free)
- 1 tsp sugar
- Salt to taste
- Fresh coriander for garnish
Instructions
- Marinate the Chicken: In a large bowl, combine the yogurt, turmeric, cumin, garam masala, paprika, salt, lemon juice, and diced chicken. Mix thoroughly, cover, and let marinate in the refrigerator for at least 30 minutes (or ideally overnight for deeper flavor).
- Sauté the Chicken: Heat the oil in a large pan over medium heat. Add the marinated chicken and sauté until golden brown, about 6–8 minutes. Remove the chicken and set it aside.
- Create the Sauce: In the same pan, melt the butter. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Then, stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Mix in Spices and Tomatoes: Stir in the coriander powder, garam masala, and optional chili powder. Pour in the crushed tomatoes and let everything simmer together for about 10 minutes, allowing the flavors to meld beautifully.
- Add Cream and Sugar: Pour in the cream (or coconut milk) and sprinkle in the sugar. Allow it to simmer for an additional 5 minutes, tasting and adjusting salt as necessary.
- Combine: Return the cooked chicken to the pan, mixing it well into the sauce. Let it simmer for another 5 minutes until everything is heated through and combined.
- Serve: Garnish with fresh coriander and serve hot with fluffy basmati rice or warm naan, allowing everyone to dive into the creamy goodness!
Notes
This butter chicken can be made in advance and reheated. Store leftovers in an airtight container for up to 3 days.
