Description

These delightful Tropical Mango Cookies are bursting with juicy mango, sweet coconut, and a hint of crunch from macadamia nuts, perfect for a slice of summer year-round.


Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped fresh mango
  • 1/2 cup shredded coconut
  • 1/2 cup chopped macadamia nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together flour, baking soda, and salt; set aside.
  3. Cream the softened butter, brown sugar, and granulated sugar together until smooth and creamy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Mix in the dry ingredients gradually until just incorporated.
  6. Fold in the chopped mango, shredded coconut, and macadamia nuts (if using).
  7. Drop spoonfuls of dough onto ungreased baking sheets, spacing them to allow for spreading.
  8. Bake for 10-12 minutes or until the edges turn golden brown.
  9. Let cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

For a zesty twist, add lime zest or drizzle melted dark chocolate over cooled cookies. Store in an airtight container for up to a week.
