Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 cup fresh basil, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden and cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
  2. In the same skillet, add the sun-dried tomatoes, spinach, and basil. Sauté for a few minutes until the spinach is wilted, filling your kitchen with a heavenly aroma.
  3. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer, letting the flavors mingle.
  4. Return the chicken to the skillet, spooning the sauce over the top. Cook for another 5 minutes until the chicken is heated through and saucy.
  5. Serve hot, topped generously with freshly grated Parmesan cheese.

Notes
