- 2 lbs potatoes
- 1/2 cup sour cream
- 1/2 cup cream cheese
- 1/4 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup cooked turkey bacon, crumbled
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- 1/2 cup additional cheddar cheese for topping
Instructions
- Preheat the oven to 350°F (175°C).
- Boil the potatoes in salted water until tender, then drain and cool slightly.
- Peel and mash the potatoes in a large bowl until smooth and creamy.
- Stir in sour cream, cream cheese, milk, shredded cheddar cheese, crumbled turkey bacon, green onions, salt, and pepper until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
- Top with additional cheddar cheese for that glorious, gooey finish.
- Cover with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.
