- 2 cups fresh or frozen cherries
- 1 cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 recipe for pie crust (homemade or store-bought)
- 1 tablespoon butter
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the cherries, sugar, cornstarch, lemon juice, vanilla extract, and salt in a saucepan over medium heat. Stir frequently until the mixture starts to bubble.
- Simmer the filling for about 5 minutes, then remove from heat and set aside.
- Roll out half of the pie crust and fit it into a 9-inch pie pan.
- Pour the cherry filling into the crust and dot with butter.
- Roll out the second half of the pie crust and place it over the filling. Seal the edges and make slits in the top crust to allow steam to escape.
- Bake for 45-50 minutes or until the crust is golden brown and the filling is bubbly.
- Cool before serving.
