A refreshing No-Cook watermelon salad with mint and lime, perfect for summer gatherings.
Ingredients

- 1/4 cup fresh lime juice
- 1/2 cup mint leaves, roughly chopped
- 1/4–1/2 teaspoon salt, or to taste
- Cayenne pepper, to taste
- Optional: 1/2 cup diced cucumber
- Optional: 1/2 cup diced berries
- Optional: A splash of fruit juice or vinegar (about 1/4 cup)
Instructions
- In a large bowl, combine the chunks of watermelon, fresh lime juice, and roughly chopped mint leaves.
- Sprinkle in the salt and cayenne pepper to taste.
- Gently toss everything together until evenly mixed.
- If not serving immediately, refrigerate for about 1 hour before serving.
