Description

A refreshing No-Cook watermelon salad with mint and lime, perfect for summer gatherings.


Ingredients

  • 4 lbs (about 6 cups) seedless watermelon, cut into small chunks
  • 1/4 cup fresh lime juice
  • 1/2 cup mint leaves, roughly chopped
  • 1/41/2 teaspoon salt, or to taste
  • Cayenne pepper, to taste
  • Optional: 1/2 cup diced cucumber
  • Optional: 1/2 cup diced berries
  • Optional: A splash of fruit juice or vinegar (about 1/4 cup)

Instructions

  1. In a large bowl, combine the chunks of watermelon, fresh lime juice, and roughly chopped mint leaves.
  2. Sprinkle in the salt and cayenne pepper to taste.
  3. Gently toss everything together until evenly mixed.
  4. If not serving immediately, refrigerate for about 1 hour before serving.
