Description

Golden-brown and crispy Zucchini Patties that are tender on the inside, perfect for any meal.


Ingredients

Scale
  • 2 medium zucchinis, shredded
  • 1/2 teaspoon salt
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1/4 teaspoon black pepper
  • Oil for frying

Instructions

  1. Place the shredded zucchini in a clean towel and squeeze out excess moisture.
  2. In a bowl, combine the drained zucchini, salt, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, beaten egg, and black pepper. Mix until evenly coated.
  3. Heat oil in a skillet over medium heat until it shimmers.
  4. Form the mixture into patties, about the size of your palm, and carefully place them in the skillet.
  5. Cook for about 4-5 minutes on each side until golden brown and crispy.
  6. Once cooked, drain them on paper towels to soak up excess oil and serve warm.
