Ingredients

- 2 medium zucchinis, shredded
- 1/2 teaspoon salt
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 egg, beaten
- 1/4 teaspoon black pepper
- Oil for frying
Instructions
- Place the shredded zucchini in a clean towel and squeeze out excess moisture.
- In a bowl, combine the drained zucchini, salt, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, beaten egg, and black pepper. Mix until evenly coated.
- Heat oil in a skillet over medium heat until it shimmers.
- Form the mixture into patties, about the size of your palm, and carefully place them in the skillet.
- Cook for about 4-5 minutes on each side until golden brown and crispy.
- Once cooked, drain them on paper towels to soak up excess oil and serve warm.
