Description

A quick and hearty meal featuring chicken sausage and colorful veggies, cooked to perfection in the air fryer.


Ingredients

  • 1 large red bell pepper – cut into 1-inch pieces
  • 1 large orange bell pepper – cut into 1-inch pieces
  • 1 red onion – peeled and cut into 1-inch pieces
  • 1 medium zucchini – cut into 1-inch pieces
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • Pinch of black pepper
  • 1 package chicken sausage (12 oz) – sliced into 3/4 inch rounds

Instructions

  1. Begin by chopping the veggies: add the red bell pepper, orange bell pepper, red onion, and zucchini to a large mixing bowl.
  2. Drizzle the veggies with avocado oil. Give them a gentle toss to ensure they’re all coated in that luscious oil.
  3. In a smaller bowl, combine the garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Mix the spices well and then sprinkle them onto the veggies. Toss again to ensure every piece is beautifully seasoned.
  4. Take the delicious chicken sausage and slice it into 3/4 inch rounds. Add it to the bowl with your seasoned veggies and toss everything together, allowing the flavors to marry.
  5. Preheat your air fryer to 390 degrees F if needed. Once it’s ready, give the basket a light spray with cooking spray to help achieve that crispy finish.
  6. Carefully add the chicken sausage and veggie mixture to the air fryer basket, spreading them into an even layer. Close the basket and cook for 10 minutes, flipping halfway through for even cooking.
  7. Once the cooking time is up, check to ensure your chicken sausage is heated through and the veggies are tender and slightly charred. Remove from the air fryer and serve hot.

Notes

Feel free to swap in your favorite veggies or different types of sausage. Leftovers can be stored in an airtight container in the fridge for 3 days.
